

Mahon (or Mao as it is known locally) is the capital of Menorca, situated on the eastern side of the island, and has one of the largest natural harbours in the world. Famous for its special Mahon cheese, Xoriguer Gin and mayonnaise*, Mahon has so much to offer visitors to Menorca.
At night, the bars and restaurants along the port come alive and you can end up spending many hours here, just relaxing and enjoying your evening meal in the vibrant and buzzing atmosphere.
Mayonnaise was invented in 1756 by a French chef of the Duc de Richelieu. After the Duc beat the British at Port Mahon, his chef created a victory feast that was to include a sauce made with cream and eggs. When he realised there was no cream in the kitchen, the chef substituted olive oil for the cream and Mayo, a new culinary creation, was born. The chef named the new sauce "Mahonnaise" in honour of the Duc's victory.
